It is always best to protect a trade name and a logo if you are using both. There are different ways to do so: registering word and visual parts separately, combined or doing both options simultaneously.
These paths provide different types of protection. For example, when filed separately, if someone uses your wordpart with another logo, it may still be considered trademark infringement.

Not necessarily. Sometimes, the products being in different categories still does not make it safe to file a similar trademark for different goods and/or services.
For example, a clothing brand may not be able to register the same mark as a well-known restaurant, because restaurants commonly extend into merchandise. If consumers are likely to assume a connection between the two, that's enough to create a likelihood of confusion.
